Butter Chicken

Ingredients

  • 4 tbsp butter

  • 2 tbsp vegetable oil

  • 4 large skinless, boneless, chicken thighs, cut into bitesize pieces

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 2 tsp curry powder

  • 1 tbsp curry paste

  • 2 tsp tandoori masala

  • 1 tsp garam masala

  • 6 oz can tomato paste

  • 3/4 tsp ground cardamom

  • 1 cup low-fat plain yogurt

  • 14 oz can coconut milk

  • salt

Make

  1. Melt butter and vegetable oil over med heat
  2. Stir in chicken, onion, garlic, cook 10 min
  3. Stir in curries and masalas, and tomato paste. Stir
  4. Pour into slow cooker, add cardamom, milk, yogurt
  5. Cook high 4-6 hours or low 6-8 hours
