Buffalo Chicken Salad

Ingredients

  • 2 hearts romaine lettuce

  • spinach

  • 3 shredded carrots

  • 1 red bell, chopped

  • 1 avocado

  • 1 cucumber

  • tomato

  • blue cheese crumbles or shredded monterey jack

  • 1 lb chicken (thighs or breast)

  • 1 tbsp oil

  • 2 tbsp butter

  • 1/4 cup buffalo sauce

  • ranch dressing

Make

  1. Preheat cast iron to med-high
  2. Add oil and butter to pan with chicken, sear 2-3 min then add hot sauce. Cook until done
  3. Roughly chop and combine veggies
  4. Roughly chop lettuce and combine with spinach
  5. Top with desired amount of ranch dressing, extra buffalo sauce, and cheese
