Breakfast Burritos

Ingredients

  • 6 eggs

  • 0.5 lb bulk sausage, cooked

  • 1/4 cup salsa

  • 1 cups cheddar cheese

  • 12 flour tortillas

  • 1/2 green pepper, finely diced

  • 3 potatoes, shredded and fried until cooked

  • jalapeno

  • 2 oz chopped green chilies

  • 1 clove garlic, minced finely

  • 1/2 onion, finely diced

  • 1 tomato, chopped

  • 1 green onion, sliced

Make

  1. Scramble eggs until done, stir in sausage and salsa and other stuff
  2. Warm tortillas to make flexible
  3. Make burritos
  4. Freeze burritos in single layer on greased sheet pan
  5. After frozen, wrap individually in foil, store in freezer in ziplock bags
