Braised Green Beans With Potatoes And Basil

Ingredients

  • 5 Tbsp extra-virgin olive oil

  • 1 onion, chopped fine

  • 2 tsp dried oregano

  • 4 garlic cloves, minced

  • 1.5 cups water

  • 1.5 lbs greenbeans, trimmed and cut into 2-inch pieces

  • 1 lb Yukon gold potatoes, peeled and cut into 1-inch pieces

  • 1/2 tsp baking soda

  • 15 oz can diced tomatoes, drained with juice reserved, chopped

  • 1 Tbsp tomato paste

  • salt

  • pepper

  • 3 Tbsp chopped fresh basil

  • lemon juice

Make

  1. Heat 3 Tbsp oil over medium heat. Add onion and cook until softened (~5 min). Stir in oregano and garlic and cook until fragrant
  2. Stir in water, green beans, potatoes, and baking soda. Bring to a simmer and cook for 10 min, stirring occasionally
  3. Stir in tomatoes and their juice, tomato paste, 2 tsp salt, and 1/4 tsp pepper. Cover and simmer until sauce has thickened and green beans can be easily cut (~40 min)
  4. Stir in basil and season to taste with salt, pepper, and lemon juice
  5. Serve drizzled with remaining 2 Tbsp of olive oil
