Black Bean Soup

Ingredients

  • 4 slices bacon, cut into 1/3 inch pieces

  • 1 large yellow onion, finely chopped

  • 4 garlic cloves, minced

  • 1 jalapeno, seeded and finely chopped

  • 1 Tbsp ground cumin

  • 3 15oz cans black beans, drained

  • 3 cups low-sodium chicken or vegetable broth

  • salt

  • pepper

  • lime juice

  • tortilla chips

  • shredded cheddar cheese

  • avocado

  • sour cream

  • scallions, sliced

Make

  1. In saucepan, add bacon and cook over medium heat until fat starts to render (~3 min)
  2. Add onions, garlic, jalapenos and cook until onions are softened (~6 min), stirring occasionally. Add cumin and stir for ~10 seconds
  3. Add 2/3 of beans and mash to a lumpy puree. Add remaining beans and broth and season with salt and pepper
  4. Bring to boil, reduce heat and simmer until soup has thickened (~10 min)
  5. Stir a splash of lime juice and check seasonings
  6. Serve with desired toppings
