Berry Cheesecake Bars

Ingredients

  • 7 oz graham crackers

  • 1/2 cup toasted pecans

  • 1/4 tsp salt

  • 1/3 cup canola oil

  • 16 oz cream cheese

  • 2 cups plain Greek yogurt

  • 2/3 cup confectioners’ sugar

  • 1 tsp lemon zest

  • 1 Tbsp lemon juice

  • 5 cups fresh berries

Make

  1. Pulse graham crackers, pecans, and salt until finely ground
  2. Drizzle in oil, then pulse to combine. Press into 9x13 in. baking dish
  3. Add cream cheese, yogurt, sugar, and lemon zest and juice to processor. Puree until smooth. Dollop onto crust and spread evenly. Cover and refrigerate until cold (~2 hours)
  4. Top with berries and serve
