Baked Shrimp With Tomatoes And Feta

Ingredients

  • 1 Tbsp olive oil

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 2 14.5-oz cans no-salt-added diced tomatoes, with juices

  • 1/4 cup fresh Italian parsley, minced

  • 1 Tbsp fresh dill, minced

  • 1.25 lbs medium shrimp, peeled and deveined

  • 1/4 tsp salt

  • 1/4 tsp black pepper

  • 2/3 cup crumbled feta cheese

Make

  1. Preheat oven to 425F
  2. Heat oil in cast-iron skillet over medium-high heat. Add onion and cook until softened (~3 min)
  3. Add garlic and cook for 1 min
  4. Add tomatoes and bring to boil, reduce heat to medium-low and simmer for 5 min, until tomato juices thicken
  5. Remove from heat and stir in parsley, dill, and shrimp, and season with salt and pepper
  6. Sprinkle feta over the top and bake until shrimp are cooked through (~12 min)
