Baked Pineapple Salmon

Ingredients

  • 1/4 fresh pineapple, sliced into rings

  • 2 small salmon fillets

  • salt

  • black pepper

  • 1/2 Tbsp butter, melted

  • 1/2 tsp Sriracha

  • 1 tsp honey

  • 1 Tbsp chopped fresh cilantro

  • 1 clove garlic, minced

  • 1/2 tsp toasted sesame oil

  • pinch red pepper flakes

  • toasted sesame seeds

  • green onions, thinly sliced

  • lime wedges

Make

  1. Preheat oven to 350F and lightly grease a baking sheet
  2. Season both sides of salmon with salt and pepper
  3. Arrange sliced pineapple on baking sheet, and place salmon on top
  4. In a small bowl, whisk butter, sriracha, honey, cilantro, garlic, sesame oil, and red pepper flakes. Brush over salmon
  5. Bake until Salmon is cooked through (~20 min). Broil for 2 minutes until salmon is lightly golden
  6. Garnish with sesame seeds and green onions, serve with lime wedges
