Bbq Cauliflower And Chickpea Tacos

Ingredients

  • 1 cauliflower

  • 1.25 cup cooked chickpeas

  • 1 tsp olive oil

  • 10-12 tortillas

  • 1 jalapeno, sliced

  • 1 tsp cumin

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp salt

  • 1 tsp chili powder

  • 1 tsp sugar

  • 1/2 tsp smoked paprika

  • 1/4 tsp black pepper

Make

  1. Preheat oven to 375 F
  2. Mix BBQ rub ingredients (cumin-pepper)
  3. Chop cauliflower, add along with chickpeas and drizzle with oil, sprinkle BBQ rub as needed. Toss to coat and add to sheetpan
  4. Bake for 25 min, flipping once
