Blanching


Instructions

  1. Bring large pot of water to boil.
  2. Add salt if desired.
  3. Add vegetables in small batches to keep water boiling.
  4. Boil until desired tenderness is reached (~1-5 minutes depending on vegetable).
  5. Move vegetables to a prepared ice bath to quickly stop the cooking process.
  6. Drain on a towel once vegetables are completely cooled.
